Chocolate Chip Cookie Dough Cheesecake Bars

Crust: 1 1/2 cups graham cracker crumbs
5 tablespoons butter, melted


Cookie dough: 5 tablespoons butter

1/3 cup light brown sugar

3 tablespoons sugar

1/4 teaspoon salt

1 teaspoon vanilla

3/4 cup flour

2/3 cup chocolate chips



Cheesecake: 10 oz cream cheese

1/4 cup sugar

1 large egg

1 teaspoon vanilla


Preheat oven to 325 degrees. Spray 8 inch square baking pan with non stick cooking spray. Make crust by mixing graham cracker crumbs with melted butter. Press into bottom of baking pan. Bake for 6 mins. Then prepare cookie dough by mixing together all ingredients except flour and chocolate chips. Slowly add in flour and last mix in chocolate chips. In another bowl prepare cheesecake by mixing cream cheese with sugar, then adding in egg and vanilla. Spoon cheesecake filling over crust. Then top with cookie dough. Bake about 30 mins.


The recipe says to let these chill in refrigerator overnight. We let them chill for a couple of hours. you know I couldn't wait any longer than that!! ;) So YUMMY!!
